Ray's Banana Fruit Cake (Updated August 2022)

Abbreviations:


tsp – teaspoon = 5 mL
tbs – tablespoon = 15 mL
lb – pound = 454 g = 0.454 kg


Ingredients:

1/2 cup   100 g   Extra-virgin olive oil
1/4 cup   80 g   Honey
1/4 cup   80 g   Maple Syrup
2   Eggs
3-4   Bananas - Mashed
1 tsp   6 g   Baking Soda
1 tsp   4 g   Baking Powder
1 tsp   5 g   Vanilla Extract
1/2 tsp   2 g   Salt
1 tbsp     Cinnamon
1/2 tsp   Nutmeg
1/4 cup   60 g   Milk
2 1/4 cups   270 g   White Multi-Purpose Flour
1/2 cup   60 g   Whole Wheat Multi-Purpose Flour
1/2 cup   45 g   Split Almonds
1/4 cup   Brown Raisins
1/4 cup   Golden Raisins
1/2 cup   Dried Cranberries
1/2 cup   Maraschino Cherries

 

Instructions:


1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius).


2. Grease a 2 quart (2 L) bakeware. You can use any vegetable oil or butter. Or line the pan with parchment paper.


3. In a large bowl, whisk the oil, honey and maple syrup together. This is your wet mix.


4. In a separate bowl, beat the eggs for a couple of minutes with a whisk or a fork.


5. In a third bowl mash 3-4 bananas.


6. To the large wet mix bowl with the oil, honey and maple syrup, add the beaten eggs and vanilla and whisk to blend.


7. Whisk in the mashed bananas and milk.

 

8. In another bowl wisk together the flour, baking soda, baking powder cinamon and nutmeg.


9. Switch to a big spoon and stir in the flour mix, just until combined. Some lumps are okay! Just make sure all the flour is wetted with the liquids in the mix.


9. Gently fold in almond chips, raisins and cranberries and maraschino cherries while adding the juice from the maraschino cherries used.


10. Pour the batter into your greased bakeware. Bake approximately 45 minutes. Remove from oven when a fork is inseted and it comes out clean.


12. Place the bakeware on a wire rack to cool.

Notes:


Coconut oil or high quality vegetable oil can be used instead of olive oil.
If you use coconut oil and it solidifies before or after colder ingredients are added, simply let the bowl rest in a warm place for a few, like on top of your stove, or heat it for about 10 seconds in the microwave.


If your honey is solid follow the same directions for the coconut oil.
Older spotted bananas or even partly brown bananas are more flavourful.
